Oven Pot Roast with Vegetables

6 medium potatoes
4 pounds chuck roast
1 medium onion -- sliced
salt and pepper
1 (10 3/4 oz.) can cream of mushroom soup
1 soup can water (scant)
1 (1 lb.) bag carrots (or more)


Preheat oven to 350 degrees F.

Scrub and quarter potatoes. Place meat in Dutch oven. Sprinkle with salt and pepper. Add onion. Place potatoes around meat. Pour soup over meat, then water. Add carrots. Cover with lid or foil. Bake 350° 2 1/2-3 hours OR 300° 4-5 hours.
