Picadilla from the Gasparilla Cookbook.

Picadilla I

3/4 cup olive oil
2 large spanish onions
2 green peppers
3 cloves garlic
3 pounds ground steak
1 2-pound can tomatoes
2 tablespoons capers
1 can pitted black olives
Tabasco


In the olive oil, saute the onions, peppers and garlic. When golden add the ground steak and stir until pink of meat disppears. Add the tomatoes and after cooking for about 1 hour add the capers and olives.

Tabasco sauce may be added to taste.



Picadillo II

1 pound ground beef
1 pound ground prok
2 medium onions
1 large green pepper
Olive oil
6 small tomatoes (or 2 small cans)
2 teaspoons salt
2 teaspoon garlic powder
pepper to taste
1 tablespoon brown sugar
1/4 cup vinegar
1/4 cup stuffed green olives, chopped
1/2 cup raisins
1 tablespoons capers
1/2 cup red wine or 1/2 cup tomato juice or bouillion


Chop onions and green pepper very fine and brown in the olive oil. Add chopped tomatoes, salt, garlic, pepper and meat, stirring constantly to break into small bits.

Add remaining ingredients slowly until meat is tender, about 1 hour. Serve over rice, mashed potatoes, or split buttered and toasted hamburger buns. Serves 10
