Pot Roast with Herbed Gravy

1 (2 1/2 - 3 lb.) chuck pot roast
1 tbs. oil
Brown above in oil Transfer to crockpot.

1/2 cup chopped onion1/2 port wine or marsala
1/4 cup catsup
3 tbs. quick cooking tapioca
1 tbs. Worcestershire sauce
1 tsp. thyme
1 tsp. oregano
2 clove garlic, minced


Combine above and pour over pot roast. Cover and cook on low 8-10 hours

Gravy is good over mashed potatoes or cooked noodles.

To do above but with a different sauce to a browned pot roast in crockpot sprinke 2 carrots, coarsely chopped and 2 stalks celery, sliced and 1 onion, sliced and 2 cloves garlic minced over the roast.

Mix 14 1/2 oz. can stewed tomatoes and 1 tbs. tapioca and 6 oz. can tomato paste and 1 tbs. brown sugar and 1 tsp. oregano and 1 tsp. thyme and 1/2 tsp. basil. Pour over roast. Cook for 8-10 hours and serve with noodles.
