Potato Pan Burgers

1 1/2 pounds ground beef
1/2 cup chopped onion
1/4 cup flour
1 tablespoon catsup
3/4 cup beef broth
1/2 teaspoon salt
1/4 teaspoon pepper
1 (10 3/4 ounces) can cream of mushroom soup
1 cup sour cream
Potato Puff Topping (recipe below)


Brown ground beef and onion in large skillet stirring occasionally; drain. Blend in flour and catsup; add beef broth, salt and pepper and cook until thick, stirring constantly. Stir in cream of mushroom soup and sour cream. Reheat and set aside.

Prepare Potato Puff Topping:
1 1/2 cups water
1/4 cup butter
1 1/2 teaspoon salt
1/2 cup milk
2 cups Instant Mashed Potato Flakes
2 unbeaten eggs
1 cup all purpose flour
2 teaspoons baking powder


Preheat oven to 425° F.

Heat water, with butter and salt to boiling in saucepan; remove from heat. Add milk and stir in mashed potato flakes. When flakes are soft and moist, whip lightly with fork. Add unbeaten eggs, beating well after each. Stir in flour and baking powder and beat well.

Drop topping by rounded teaspoonfuls to cover ground beef mixture. Bake at 425 degrees for 25 to 30 minutes or until golden brown.

Oven Proof skillet should measure 2 1/2 quarts. Otherwise use a wide 2 1/2 quart casserole.
