Prime Rib Roast with Yummy Stilton Sauce

1 (5 to 7 lb.) prime rib roast
3/4 cup Stoli or other premium Vodka
10 bay leaves, 10 black peppercorns
Salt (about 3 tbsp.) and dried thyme


Rub the roast with the vodka. Rub in salt and thyme. Cut 10 small pockets in the fat of the meat and insert 1 bay leaf and 1 peppercorn in each. Let it sit at room temperature for 1 - 2 hours.

Preheat oven to 425. Put in a roasting pan and roast 35 minutes. Reduce heat to 325 degrees. Roast 12 to 14 minutes per pound for rare to medium rare. 13-16 minutes for medium rare to medium. When it is cooked, let it sit in the pot for least 30 minutes.

Really Yummy Cheesy Winey Sauce:
7 shallots
1 tbsp. butter
1 1/2 cup Madeira wine
1 1/2 cups beef stock or broth
6 tbsp. cold unsalted butter
5 oz. Stilton or blue cheese, crumbled
1 tsp. fresh or prepared horseradish


Place shallots in 1 tbsp. butter and let them cook until golden and caramelized. (About 10 minutes.) Add the wine to get the bits off the bottom of the pan(deglaze it in other words).

Cook over medium high heat until wine is reduced by half. Add the stock and reduce again by half. Break the butter (6 tbsp.) into small pieces and add to the sauce, whisking constantly, until totally smooth.

Reduce the heat immediately and add the stilton. Whisk until just melted and remove from heat.

Cut the roast between the bones and serve with the sauce immediately.
