Quesadilla Pie

Beef Quesadilla Pie

1 lb. ground beef
1 cup salsa
1 (4.5 oz.) can chopped green chilies
1/4 cup ripe olives, chopped
2 pie crusts
4 oz. cheddar cheese, shredded


Preheat oven to 425 degrees F.

Brown beef; drain. Stir in salsa, chilies and olives.

Place one pie crust on greased cookie sheet. Spoon on mixture to 3/4" from the edge of the crust. Sprinkle with cheese. Top with second crust. Seal edges with fork. Cut slits in to vent.

Bake in a preheated 425 degree oven for 17-27 minutes or until crust is brown. You may need to put foil around the edges of the crust to keep from browning too much.

Serve with your choice of toppings:

Toppings: Shredded lettuce, chopped green onion, chopped tomatoes, sour cream, guacamole, extra cheese.
