Beef: Reuben Stromboli

Reuben Stromboli

1 roll refrigerated pizza dough
3 tablespoons Thousand Island dressing
8 thin slices corned beef (about 1/3 pound)
1 cup sauerkraut, rinsed and well drained
1/4 pound thinly sliced Swiss cheese


Preheat oven to 375 degrees.

Unroll pizza dough onto a rimmed cookie sheet. Flatten it and shape into a rectangle. Spread the crust with the Thousand Island Dressing, leaving a 1/2 inch margin of dough uncovered. Top with the corned beef, distributing it evenly. Spread the sauerkraut evenly over the meat. Top with the slices of Swiss cheese. Roll up the dough, jelly roll style, starting with the long side. Pinch the seams to seal and place the seam side down. Pinch both ends of roll to seal.

Bake for about 25 - 30 minutes, or until the roll is golden brown. Cut into slices to serve.

Yield: 4 servings.
