Roast Beef in Burbon Sauce
3 lb. English cut roast
1 Tbsp. vegetable oil
1/4 cup white vinegar
1/3 cup burbon
1/4 cup brown sugar
1/3 cup catsup
2 TBSP. light soy sauce
1 clove garlic, minced
1 1/2 TBSP. cornstarch
1/4 cup water
In Dutch oven heat oil and brown roast on all sides.
Combine all ingredients except for the cornstarch. Pour over beef and bring to a boil. Reduce heat, cover and simmer for l hour for medium degree of doneness.
Remove Roast from pan reserving pan juices.
Mix cornstarch with water. Bring pan juices to a boil and quickly whisk in cornstarch mixture. Boil for two minutes and serve with meat.
