Roasted Rump Roast

1 (3 to 4 lb.) rump roast
flour
salt and pepper
garlic salt


Preheat oven to 500° F.

Rub liberal amounts of salt, pepper and garlic salt on all sides of roast. Coat and pat flour on all sides. Place in a heavy pan (preferably a cast iron frypan) and put in hot preheated 500 degrees oven.

Bake approximately 15 to 20 minutes or until coating is brown. Turn down oven to 350 degrees and continue baking for approximately 45 minutes for rare roast. Remove from pan.

Add a little water to pan drippings and stir and boil to make "au jus". Slice meat thin and serve with "au jus".
