Beef Sandwich: Pepper's Sandwich Special

Pepper’s Sandwich Special

1 pound ground beef
1 medium onion, chopped
1 pound grated sharp cheddar cheese
1 (8 oz) small can tomato sauce
1 small jar of pimentos
1 small can of chopped olives
1 Tbsp chili powder (I have often replaced this with a pkg of taco seasoning)
salt and pepper to taste


Brown meat and onion. Let cool and combine with other ingredients, mixing well.

It can be used to make grilled sandwiches on sourdough bread (lightly coating the bread with mayo before grilling), stuffing French rolls from which the soft insides of the bread have been partially removed, wrap in foil and freeze (have to be defrosted before baking in oven at 350 deg for about 20 mins.

Can take Pillsbury Grands, flattened them out and filled (closing the edges with a fork), wrap in saran wrap and freeze, removing the saran wrap and baked on wire rack until the biscuits are browned.
