Shepherd's Pie

4-5 large potatoes
6 sliced mushrooms
salt
2 tbsps. chopped parsley
2 tbsps.butter/margarine
1 tbsp.tomato paste
1 dash milk
1 dash Worcestershire sauce
1 pinch pepper
1 cup brown gravy
1 lb. lean ground beef
1 pkg. (10 oz.)frozen peas or sheeled peas 1 lb.
1 large tomato chopped


Preheat oven to 400 degrees F.

Boil potatoes in salted water to cover. Drain,cool and peel. Mash in large bowl with butter, milk and season to taste with salt and pepper. Set aside.

Saute beef until browned, stirring to keep meat crumbly. Season to taste with salt and pepper. Add tomatoes, mushrooms, parsley, tomato paste, Worcestershire sauce and gravy. Stir to mix. Add peas and cook about 5 minutes. Turn mixture into casserole. Spread potatoes evenly over meat.

Bake at 400 degrees for 40 minutes,until top is crispy brown.



Shepherd's Pie

1/4 cup butter
2 onions,sliced
4 cups diced,cooked left over lamb or beef
1/4 cup flour
2 cups beef broth
2 cups each: diced tomatoes, sliced cooked carrots and cooked peas
1/2 tsp. each: dried crumbled thyme and rosemary
4 cups well seasoned mashed potatoes


Preheat oven to 375 degrees F.

In large saucepan, heat butter and saute onions 5 minutes. Add lamb or beef and sprinkle with flour. Blend in beef broth and tomatoes and stir over medium heat until bubbly and thick. Simmer 5 minutes.

Mix in carrots, peas and herbs, season to taste with salt and pepper. Spread potatoes evenly over stew.

Bake in preheated moderate oven at 375* for 35-40 minutes or until top is brown.

Serves 6.



Classic Shepherd's Pie

1 lb. hamburger
1 tbsp. shortening
1 onion, chopped
2 tbsps. flour
1 tsp. salt
1/4 tsp. black pepper
1 cup beef stock
1 cup thinly sliced carrots
1/2 cup thinly sliced celery
mashed potatoes


Preheat oven to 350 degrees F.

Brown hamburger with onion. Drain. Add flour,salt and pepper;mix well. Add broth. Cook several minutes until slightly thickened.

Add carrots and celery. Pour mixture into a 9x12 inch casserole dish.

Top with mashed potatoes. Bake at 350* for 30 minutes.
