Sirloin Tip Roast

1 (3 to 4 lb.) sirloin tip roast
2 Tbsp. all-purpose flour
2 Tbsp. shortening
1/2 cup pineapple juice
1 tsp. lemon juice
1 tsp. Dry Italian salad dressing mix
1 tsp. Worcestershire sauce
2 tsp. salt
1/8 tsp. pepper


Sprinkle meat lightly with flour. Brown slowly on all sides in hot shortening in roasting pan. Season with salt and Combine remaining ingredients and pepper; pour over meat. Cover. Roast at 325 degrees for 2 to 2-3/4 hours or until meat is tender.

Gravy for Sirloin Tip:
1-1/2 cups juices from pan
1/2 cup cold water
1/4 cup all-purpose flour


To prepare gravy, pour pan juices into large measuring cup. Skim off excess fat. Return 1-1/2 cup juices to pan. Combine 1/2 cup cold water and 1/4 cup all-purpose flour in shaker. Shake well. Stir into juices; cook stirring constantly, until gravy is thickened and bubbly.
