Slow Roasted Prime Rib

1 Prime Rib Roast
Mustard (such as a spicy garlic Dijon, but even plain ol' yellow mustard works great)
Rock Salt
Cheesecloth
dark colored roaster (like the blue ceramic on stainless kind)


Preheat oven to 400.

Rub mustard all over roast, then cover in rock salt. (The mustard adds flavor, plus helps the rock salt stick.) Wrap in cheesecloth and place in dark roaster on a baking rack. Insert a meat thermometer and place in oven. After 1 hour, shut the oven off. (Not sure how this will work with anything but an electric oven - do gas ovens hold the heat?). Leave the door closed. Let the roast set in the oven for approx an hour per pound. Approx 45 minutes before serving, turn the oven back on as low as you can set it.
