Smothered Steak

1 Swiss or thick round steak
2 medium onions, sliced into rings
Salt and pepper to taste
All-purpose flour
Vegetable oil


Place about 1/8 inch of vegetable oil in large skillet on top of stove.

Dredge steak in flour.

Put steak in vegetable oil and fry on both sides until browned, seasoning each side with salt and pepper.

Place steak in roaster that has been sprayed with Pam. Place onions on top of steak. After well browned remove steak and onions to a oven proof pan.

To drippings in skillet add flour and water to make gravy (you will want to make enough gravy to cover roast and onions). Cook on high heat for several minutes, stirring constantly. Gravy will remain fairly thin (almost like water).

Pour gravy over steak, cover and bake in 350 degree oven for approximately 3 hours or until steak is done and gravy has cooked down (gravy will thicken as it cooks).

To serve cut steak in pieces and serve onion gravy in bowl to ladle over mashed potatoes.
