Hungarian Pork and Mushroom Stew

2 lb. boneless pork shoulder
1/4 cup salad oil
3 cups chopped tomatoes (4 medium)
1 cup sliced carrots (3 medium)
1 cup sliced celery (3 ribs)
1/2 cup chopped onion
1 Tbsp. paprika
1/2 tsp. salt
1/4 tsp. ground black pepper
1 lb. fresh mushrooms
1 cup dairy sour cream
1 Tbsp. all-purpose flour


Cut pork into one inch cubes. In large saucepan heat oil until hot. Add meat. Brown on all sides. Drain and discard fat. Add vegetables and seasonings. Simmer, covered, for 30 minutes, stirring a few times.

Rinse mushrooms in water, pat dry and slice (makes about 5½ cups). Add to meat. Continue to simmer, covered, for another 30 minutes, stirring occasionally. Combine sour cream and flour, and stir into stew.
Cook until thickened, about 5 minutes. Serve over buttered noodles.

Makes 6 servings.
