Lean Beef Stew

1 pound beef flank steak, well trimmed and cut into 1-inch chunks
1/4 cup all-purpose flour
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/2 teaspoon black pepper
4 medium carrots, cut into 1-inch pieces
2 large celery ribs, cut into 1/2-inch slices
1 can (10 1/2 ounces) condensed beef broth
5 medium potatoes, cut into 1-inch chunks


In a medium bowl, combine steak and flour; toss to coat well.

Coat a nonstick soup pot with nonstick cooking spray and heat over medium-high heat. Add the beef, sprinkle with the garlic powder, onion powder, salt and pepper. Sauté for 3 to 5 minutes, or until the steak is browned on all sides. Add carrots, celery, and broth; cover, reduce the heat to low and simmer for 40 to 45 minutes.

Add potatoes; cover and simmer for 25 to 30 minutes, or until potatoes are fork tender.

Serves 4
