Hot and Spicy Stir-Fry Beef

Amount Measure Ingredient -- Preparation Method

1/4 cup tomato paste
1/2 teaspoon red hot-pepper sauce
1/2 cup water
1 teaspoon sugar
1 teaspoon sesame oil
1/2 cup chopped green onions
2 cloves garlic -- crushed
2 tablespoons chopped fresh ginger or 2 tsp ground
2 stalks lemon grass, sliced or grated zest of 1 lemon
1/2 pound steak (sirloin, flank, skirt,strip) -- cut in 1/2x2" strips
2 tablespoons unsalted, roasted peanuts -- chopped


Prepare sauce: Mix tomato paste, pepper sauce, water and sugar; set aside.

Heat oil in a wok or skillet on high. Add green onions, garlic, ginger, and lemon grass, and stir-fry 2 minutes.

Add meat and stir-fry 4-5 minutes. Add sauce, and mix a few seconds. Remove to a plate and sprinkle with peanuts.

Serve immediately with Sesame Noodles with Snow Peas
