Bachelor in the Kitchen Stroganoff

1 onion, chopped
1/2 pound mushrooms, sliced
4 cloves garlic
4 oz. butter
2 tablespoons flour
14 ounces beef stock
tarragon
2 tablespoons tomato paste
1/4 cup red wine
1/2 teaspoon Dijon mustard
1 lb. roast beef, sliced thin
1 cup sour cream
12 ounces egg noodles
Chop onion and garlic, saute in butter ubtil golden. Add flour and stir until flour is also golden, but not brown.
Add stock and wine, stir constantly until smooth. Cook on low heat 20-25 minutes. Add mustard, salt and pepper, to taste. Set aside cut beef into 1/2 inch strips. Add to the sauce and simmer on low heat.
Quickly (2-3 minutes) saute mushrooms in another 2 tbl. butter. Add mushrooms and sour cream to sauce. Warm through, but don't boil(it will curdle). Can also serve with rice pilaf. Garnish with parsley.
Note: Using deli roast beef , already thin sliced, saves time in this recipe.
