Stuffed Flank Steak

1 1/2 - 2 lb. flank steak
1 1/2 cups soft bread crumbs
1 1/2 cups mashed potatoes
4 tbsp. instant minced onion
3 tbsp. parsley flakes
3/4 tsp. salt
1 tsp. poultry seasoning
1/4 tsp. pepper
3 slices crisp cooked bacon, crumbled
1/4 cup hot water
3/4 cup water


Combine bacon drippings, bread cubes, potatoes, instant minced onion, parsley, salt, poultry seasoning, pepper and bacon. Mix well. Gradually add 1/4 cup hot water.

Score steak lightly on both sides in 1 1/2 inch squares. Beat on both sides with a meat mallet. Spread with stuffing to within 1/2 inch of edge. Roll up jelly roll fashion. Tie roll in 3 or 4 places with string and place, seam side down, in pan.

Add 3/4 cup water. Cover and bake slowly 1 hour and 15 minutes. Or until meat is tender. To serve, cut cross wise slices. Serves 6.
