Marli's Very Own Stuffed Peppers

6 large green, red or yellow peppers, cored
Bits of pepper removed when slicing off tops, chopped
2 stalks celery, diced
1 medium onion diced
3 cloves garlic, minced
1 lb. extra lean ground beef (or chicken, veal or pork)
1 cup raw rice, cooked with salt and Italian seasoning
1 (14 1/2 oz.) can diced tomatoes


Brown beef and drain all fat. Saute onions and garlic until tender.Add peppers and garlic.

Return beef and cooked rice. Add tomatoes. Season with salt pepper, Italian seasoning, whatever you like.

While meat mixture is cooking in large pot boil water. Blanch peppers just before they are needed so they are still hot.

Place them in the water and fill the cavity with water and boil about 2 minutes. Drain.

Fill pepper with meat mixture and serve.
