Stuffed Peppers
1 lb. ground beef, very lean, cooked
1 (11 oz.) can corn, drained
1 red pepper, diced
1 cup cooked rice
2 green onions sliced
1 large jalapeno chopped
1 (16 oz.) can tomato sauce
salt and pepper to taste
dash cayenne pepper
1 cup cheddar cheese
1 large can V8 Juice
Mix all ingredients and stuff peppers. Pour tomato juice over top of peppers Put into oven and bake for 1 hour at 350.
