Stuffed Peppers For Two in 20 Minutes

1/2 lb. ground beef
1 small onion, chopped
1 clove garlic, minced
Salt and pepper to taste
spices of your choice (basil, cayenne, etc)
1 Cup cooked rice
1 (14 oz.) can condensed tomato soup
1/2 Cup grated cheddar, divided (optional)
2 medium green peppers


Saute ground beef, onion and garlic until cooked thoroughly, stirring to break up meat. Drain off fat and season to taste. Stir in cooked rice. Stir in 2/3 can of soup and most of cheddar (reserve a little to sprinkle on top).

Meanwhile, core green peppers and wash. Stand up on end and put 1 Tbsp. water in each, microwave on high for 2 minutes. Carefully drain peppers.

Stuff peppers with meat mixture, spoon remaining soup over top, sprinkle with cheese and microwave on high for another 2 minutes or so.

Peppers should be crispy/tender.
