Easy Stuffed Peppers

1 lb. ground beef (raw)
1 small onion, chopped fine
1/2 cup rice
2 eggs
6-8 green peppers (more or less, depending on their size)
1 (28-oz.) can crushed tomatoes in juice
2 Tbsp. dark brown sugar
1/4 cup red wine vinegar


Preheat oven to 350 degrees F.

Combine beef, onion, uncooked rice and eggs.

Remove tops of peppers. Remove seeds and membranes and lightly stuff peppers with meat mixture. Place stuffed peppers in a deep casserole dish that has been sprayed with cooking spray.

Combine tomatoes, brown sugar and vinegar and pour over and around peppers.

Cover casserole and bake in preheated 350 oven for about an hour. These freeze very well.

NOTE: You can use this filling and sauce to make stuffed cabbage. Just remove cabbage leaves carefully and drop them into boiling water until they are pliable, then place a spoonfull of filling near the stem end of the leaf, fold in the sides and roll up.

When you have used all the filling, chop remaining cabbage and place on the bottom of your casserole, then place the rolls, seam-side down on the cabbage and pour the sauce over. Follow baking instructions for stuffed peppers.
