Stuffed Round Steak

1/3 cup butter
1 onion
1 clove garlic, minced
3 cups coarse bread crumbs
1/2 cup minced celery
1-1/2 tables. minced parsley
1 teas. salt
1/4 teas. thyme
1/2 teas. sage
1/4 teas. pepper
3-pound slice of round steak
2 tables. hot fat
1/2 cup hot water


Prepare stuffing: Melt butter in skillet; saute onion and garlic until golden. Combine with crumbs, celery, parsley, salt, thyme, sage and pepper.

Preheat oven to 350 degrees.

Spread stuffing on steak; roll up; tie securely.

Brown meat on all sides in fat in heavy casserole. Add water; cover, cook in preheated oven for 1-1/2 hours. Remove cover; cook for 30 minutes longer.

Serve with pan juices, thickened, if desired.

NOTE: When using deer meat, change the 1-1/2 hours cooking time to 3 hours.
