Swiss Steak

2 lbs. beef round steak, 1" thick
1/4 cup flour
1/4 tsp. pepper
1 tsp. salt
1 tsp. shortening
1/2 cup onion chopped
1 pound can tomatoes, cut up
2 Tbsp. green pepper, chopped


Combine flour, salt and pepper; pound into meat. In large skillet, brown meat on both sides in hot shortening. Top with onion and tomatoes. Cover; cook over low heat about 1-1/2 hours, or until tender. Or, transfer to baking dish and cook covered at 350°F for 1-1/2 hours. Add green pepper; cook 15 minutes more. Skim off excess fat. Thicken juices if desire. Season to taste.




Flavorful Swiss Steak

2 lbs. round steak
2 tsp. salt
1/2 tsp. pepper
1 cup flour
1/4 cup oil or bacon drippings
2 (8 oz.) cans tomato sauce
2 cups warm water
2 large onions
2 carrots, grated
1 green pepper, chopped
1 stalk celery, chopped
1 tbsp. Worcestershire sauce


Preheat oven to 350 degrees F.

Cut steak into serving pieces. Mix flour, salt and pepper; pound into steak.

Brown steak in oil or bacon drippings on both sides. Mix remaining ingredients; heat to boiling. Pour sauce over steak. Bake at 350°F for 1 hour and 30 minutes.
