Beef and Guiness Pie

Pie Ingredients:
1 tabsp. oil
1 lb. braising steak cut into cubes (by braising I mean leanish casserole beef)
1 onion - chopped
half pound button mushrooms
three quarters pint Guinness
3 tsp. Worcestershire sauce
2 tsp. Dijon mustard
salt and ground black pepper
rind and juice of 1 orange
2 tabsp. chopped parsley
2 tabsp. chopped chives
2 tsp. cornflour

Suet Pastry:
8 oz. self-railsing flour
4 oz. shredded suet
2 tabsp. chopped parsley
egg lightly beaten


Heat oil, add meat and cook over high heat until brown. Add onion, reduce heat and cook for a further 2-3 minutes. Stir in Guinness, Worcestershire sauce, mustard, salt and pepper, simmer for 45 minutes.

In a bowl place flour, suet, parsley and half tsp. salt. Add one quarter pint of cold water. Mix to a soft dough. Roll out on a floured surface and cut into required shape to fit the top of the pie dish (with a little to spare.

Add mushrooms to meat and cook a further 10 minutes. Add orange juice, rind and herbs. Mix cornflour with 4 tsp. water, mix well, stir into meat mixture.

Place meat mixture in a large pie dish. Preheat oven 190 degrees/375 F gas mark 5.

Place pastry on top, glaze with beaten egg, bake for one hour.
