Chitlins
5 lb. chitterlings
2 red pepper pods
6 whole cloves
1 bay leaf
2 cloves garlic
1 large onion, whole
1 stalk celery, with leaves
1 tsp. black pepper
1/4 c. vinegar
boiling salt water
Soak chitterlings in cold water to cover for at least 6 hours; drain. Thoroughly clean and wash. Place in kettle with pepper pods (cup in pieces), cloves, bay leaf, garlic, onion, celery, black pepper and vinegar. Add boiling salt water to cover. Simmer until tender.
Fried Chitlins: Drain the boiled chitlins and cut into small pieces. Dip in beaten egg, then in cracker crumbs or dip in a fritter batter. Fry in deep hot fat until golden brown.
