Sandwich Casserole
12 slices bread, crusts removed
6 slices Swiss or American cheese
3 c. diced ham or sausage or turkey etc.
4 eggs
2 c. milk
1/4 c. chopped onion (optional)
salt and pepper to taste
Butter both sides of bread, arrange 6 slices in bottom of 9 x 13-inch dish. Arrange cheese slices over bread, then meat. Top with remaining 6 bread slices.
Beat eggs and milk and pour over casserole. Sprinkle top with onion, salt and pepper. Refrigerate overnight. Bake at 250 degrees for 1 hour.
If sausage is used, butter only bottom of bottom bread slices and top of top bread slices. Casserole will be very runny, but firm by morning. Spray Pam and slices remove quickly. (Brown and drain sausage prior to placing in casserole.)
