Southwest Meatloaf
1 lb ground beef
1/3 lb ground pork
1 cup crumbled corn bread
1/4 cup finely chopped onion
3/4 cups Pace chipotle salsa
1 clove garlic, minced
1 lg egg
1 1/2 teaspoons ground cumin
1/2 teaspoon crumbled oregano
1 teaspoon salt
1/2 cup enchilada sauce
Blend all ingredients except enchilada sauce and pack into loaf pan. Spread enchilada sauce over top of loaf. Bake at 400ºF. for 1 hour.
