Hawaiian Ham Loaf

1 (8 oz.) can crushed pineapple
2 tblsp. brown sugar
1 1/2 cups quick-cooking oats, uncooked
1/3 cup tomato juice
4 cups ground cooked ham
1/2 lb. highly seasoned bulk sausage
1/3 cup diced green pepper
2 eggs, slightly beaten
1/2 tsp. salt
Parsley (optional)

Preheat oven to 350 degrees F.

Drain pineapple, reserving juice. Combine pineapple juice and sugar in a small saucepan; cook over low heat until sugar dissolves. Pour pineapple juice mixture over uncooked oats; add tomato juice.

Combine remaining ingredients; mix well. Stir in oats mixture.

Spoon into a 9x5x3 inch loaf pan or shape into a loaf and place on a shallow baking pan. Bake for 1 1/2 hours. Garnish with parsley, if desired.

Yield: 6 to 8 servings
