Patchwork Quilt Country Inn Diced Potato Bake

1 Carton dairy sour cream – 8 oz.
2 Tablespoons butter -- melted
2 Tablespoons All Purpose Flour
2 Medium potatoes
1 Cup fully cooked ham -- 5 oz. chopped
4 eggs -- hard cooked chopped
1/2 Cup Colby cheese -- shredded
1/2 Cup American cheese -- shredded
2 Tablespoons onion -- chopped
2 Tablespoons parsley -- snipped


In a large bowl, stir together the sour cream, melted butter and flour.

Peeled and cooked 2 medium potatoes till just tender. Finely chop the potatoes (you should have about 2 cups). Add to the sour cream mixture along with remaining ingredients, tossing till combined.

Transfer to an 8x8x2-inch baking dish. Bake in a 350ø oven 30 minutes or till bubbly. Serve warm.

Serves 4 to 6.
