Pintos and Ham Bone
3 cups pinto beans, soaked for 8 to 10 hours
1 onion, diced
2 cloves garlic, minced
1 bay leaf
1 ham bone or shank
Drain beans. Place in pressure cooker; cover with water 1 inch over beans. Add onions, garlic, ham, and and bay leaf. Cook at 15 lbs. pressure for 45 minutes. Let pressure come down. Check to see that beans are done. If not simmer a bit before serving.
