Spiced Holiday Ham

Bake a 12-14 pound ham as directed by packer. About 30 minutes before ham is done, remove from the oven. Increase oven temperature to 450°.

1 cup of brandy
1 cup honey
1 cup orange marmalade
1/2 teaspoon pumpkin pie spice
2 pounds mixed dried fruit (can include cranberries)


Mix the above ingredients. Let stand and marinade.

In a large skillet, melt 1/4 pound butter, add fruit mixture and 1/2 a teaspoon of white pepper, reduce mixture until thick (about 20 minutes). Pat mixture on ham and return to 450° oven for 30 minutes or more to impart some flavor. Dressing can be served on the side. Remove and garnish with red candied cherries.
