Lamb Chops
2 regular or shoulder lamb chops (about 3/4 to 1 lb. total)
2 cloves garlic, chopped roughly
1 tsp. freshly ground black pepper
1/2 tsp. (or more to taste) Kosher salt
2 Tbsp. fresh rosemary needles, chopped
Place lamb chops on waxed paper or washable work surface. Combine remaining ingredients and divide half of mixture over top sides of chops. With a wooden meat tenderizer, gently tap the herb mixture into the chops. Turn chops over and repeat with remaining herb mixture.
Preheat grill or cast iron skillet and grill or saute lamb (if using skillet, add about 1 tsp. of olive oil to pan before adding chops) briefly. Lamb should be slightly pink in the center.
