Lamb Curry

Lamb Curry by Angel

2 cups finely chopped lamb
2 stalks celery
1 medium onion
1 medium apple, peeled
3 Tablespoon butter or margarine
2 Tablespoon all-purpose flour
1 Tablespoon plus 1 tsp. curry powder
1 teaspoon each Worcestershire sauce
Seasoned salt -- to taste
1/2 teaspoon garlic salt
2 cups hot lamb broth or chicken or beef stock


Trim fat from lamb. Chop lamb by hand or use food processor with metal blade. Place lamb in bowl; set aside.

Finely chop celery, onion and apple.

In large skillet melt butter over medium heat saute celery, onion and apple for 7 minutes. Add flour and seasoning blending thoroughly. Cook about 2 minutes, stirring constantly.

Add heated lamb broth and stir until mixture boils. Add lamb. Simmer for 12 to 15 minutes. Thin with bouillon or milk if mixture becomes too thick.

Transfer to serving dish. Sprinkle with coconut. Serve with rice.

Makes 4 servings.
