Grilled Leg of Lamb

l leg of lamb, boned, trimmed and butterflied.

Sauce:
1 cup catsup
1 cup water
1/4 cup Worcestershire sauce
1/4 cup vinegar (apple cider is fine)
A few drops of Tobasco
1/4 cup firmly packed brown sugar
1 teasp. celery salt
1 teasp. chili powder
1 teasp. salt


Combine sauce ingredients in a 2-qt. pan. Bring it to a simmer but do not boil. Remove from heat and pour over lamb. Marinate, covered, overnight in refrigerator.

Grill lamb 8 to l0 inches from hot coats for about 50 minutes, (the time varies greatly with how thick the meat is, your BBQ, etc. check it often). Baste frequently with sauce. It should be crisp and brown on outside and pink inside.

Pour left over marinade into a saucepan and bring to a boil. Boil briefly and serve as a sauce for meat.
