Lamb: Ground Lamb with Orzo

Ground Lamb with Orzo

6 oz. ground lamb
1/2 T. olive oil
1 onion, chopped
3 cloves garlic, minced
1 tsp. cinnamon
1/2 tsp. oregano
1/4 tsp. crushed red pepper
1 14 1/2 oz can whole tomatoes, undrained
2 Tb. chopped pitted black olives
salt and pepper to taste
12 oz Orzo
1/4 c. crumbled feta cheese


Put a large pot salted water on to boil.

In a small skillet, brown lamb. Drain meat.

In a Dutch oven, heat oil over med. heat. Add onion and cook, stirring until softened. Add garlic, cinnamon, oregano and red pepper. Cook, stirring, until fragrant, about 1 minute. Add lamb.

In a food processor, puree tomatoes and their juices until smooth. Add to meat mixture and cook, stirring occasionally, until sauce is thickened, about 10 minutes. Remove
from heat and stir in olives. Season with salt and pepper.

Meanwhile, cook orzo until al dente. Drain and toss with the sauce. Serve garnished with feta.
