Leg of Lamb
1 Leg of Lamb
Salt and Pepper
2 Cloves Garlic, pressed
2 Tbl. Chopped Fresh Basil (or 1/2 t. dried basil)
1/2 tsp. Oregano
1/2 tsp. Tarragon
1/2 tsp. Rosemary
2 Tbl. Grated Parmesan Cheese
1/3 Cup Dry White Wine
1/3 Cup Olive Oil
Preheat oven to 325.
Sprinkle lamb on all sides with salt and pepper and place in a shallow roasting pan.
Mix remaining ingredients and beat until thick and well-blended.
Pour over lamb and marinate in refrigerator for several hours.
Roast lamb for about 2 1/2 hours for pink lamb and 3 hours for well-done lamb.
Baste with wine mixture every 30 minutes during cooking.
Allow lamb to stand 10 minutes before carving.
Makes 6 servings.
