Roasted Lamb

This is for a 1.6 Kg. (3 1/2 lbs.) leg.

Make small slits over the leg at various places and put in thin slithers of garlic. About 10 - 12 in all. (slithers that is, not whole cloves of garlic)

Next rub the skin with a little fresh lemon juice and sprinkle with a small amount of salt and freshly ground black pepper.

Roast in oil (or dripping), in a 180ºC (350ºF) oven for about 3 hours. Basting and turning leg over every hour or so.

Stuffed capsicums, carrots and onions placed around the leg all add to the finished flavour, and it is yummy.

Green peas and baked spuds finish it of, and don't forget the mint sauce with the lamb, it is a must.
