Sweet and Sour Lamb
1 (16-oz.) can tomatoes
1/3 cup firmly packed brown sugar
2 tbsp. cider vinegar
1 teaspoon soy sauce
2 tbsp. cornstarch
1/4 cup water
1/2 cup diced sweet mixed pickles
1 large green pepper cut in 1/4 inch strips
2 cups bit-size pieces of roast lamb
Combine tomatoes, brown sugar, vinegar and soy sauce in a large saucepan
Mix cornstarch and water in a cup until smooth; stir into tomato mixture. Cook, stirring constantly, until sauce
thickens and boils 3 minutes.
Stir in pickles, green pepper and lamb; heat, stirring constantly, to boiling. Serve over crisp Chinese noodles or
rice.
