Lamb with Spinach
2 lb. lamb cut into large cubes
2 Tablespoons olive oil (approx)
1 onion finely chopped
2 cloves garlic chopped
2 tbs. tomato puree
1 cup red wine
1 tsp. sugar
1 tsp. ground cinnamon
1 1/2 lb. spinach washed
juice of one lemon
2 Tablespoons chopped fresh parsley (approx)
Rice, cooked
Fry lamb in the olive oil until browned.
Add the onion and fry that for a few minutes then add the garlic and fry until softened.
Mix in the tomato puree, add the wine, sugar and cinnamon.
Mix very well, cover the meat with hot water or vegetable stock, cover and simmer for one hour.
Add spinach and cook until wilted.
Add the juice of one lemon and cook for 5 minutes.
Add in some fresh chopped parsley(flat leaf) and serve with rice.
