Baked Calf's Liver
from my favorite home economist, Jackie Olden

4 slices calf or beef liver, 3/4 inch thick
1 1/2 cups soft bread crumbs
2 Tbls. butter or margarine, melted
3 Tbls. chopped onion
1 small egg, well beaten
1/4 pound fresh pork, ground
Salt, pepper and crumbled dried marjoram to taste
4 slices bacon


Preheat oven to 350 degrees F.

Wash liver and pat dry. With a sharp knife cut a pocket into the side of each slice.

Mix remaining ingredients, except bacon, and use mixture to stuff liver slices.

Put stuffed slices in a well-greased shallow baking dish. Top each slice with a strip of bacon.

Cover and bake in preheated 350 degree oven for 50 to 60 minutes, or until liver is tender.

If desired, make a gravy with the pan drippings. Serve with currant jelly. Makes 4 servings.
