Liver and Onions
1 tablespoon butter
1/2 cup oil
2 large onions, sliced
1 cup white wine
1 cleaned and peeled liver steak
In skillet heat butter and oil. Saute onions on low heat until transparent.
Add wine and let alcohol evaporate about 15 minutes.
Increase heat to high and add liver, letting it cook until first drop of liquid appears on upper side, about 5 minutes. Turn and cook 3 to 4 minutes more.
Toss and cover with the onions in the pan and serve immediately.
