Fried Liver and Onions

Fried Liver and Onions

1 lb. liver sliced about 1/4" thick
2 Tblsp. flour
1/4 tsp. salt
bacon grease for frying
pan of boiling water
1 or more large onions, sliced
1 Tblsp. butter or margarine


While grease is heating in the pan, mix flour and salt. In another frying pan melt butter and add sliced onion, saute until clear. Using tongs or a fork pick up one slice of liver and dip into the boiling water (it removes alot of the blood) dredge in flour/salt mixture and place in hot grease. Repeat with remaining slices of liver.
