Prize-Winning Meat Loaf

1 1/2 lb. lean ground beef, 250 ml.
1 cup tomato juice
3/4 cup QuakerŽ Oats (Quick or One Minute, uncooked)
1 egg or 2 egg whites, lightly beaten
1/4 cup chopped onion
1/2 tsp. salt (optional)
1/4 tsp. pepper


Heat oven to 180°C (350°F). Combine all ingredients; mix lightly but thoroughly. Pat into 20 by 10 cm. (8 by 4 inch) loaf pan.

Bake for 1 hour, or until meat is no longer pink and juices run clear. Drain; let stand 5 minutes before serving.

Mix-Ins: Customize meat loaf by adding one of the following mix-ins with meat loaf ingredients; proceed as directed above.

1/2 cup - frozen (thawed) or canned corn (drained)
1/2 cup - chopped green or red bell pepper
1 (2.5 ounce jar) - sliced mushrooms, drained
1/3 cup - grated Parmesan cheese
2 tsp - finely chopped parsley or cilantro

Toppings:
Sprinkle with 1 cup shredded cheese after removing meat loaf from oven and draining; let stand five (5) minutes before serving.

Spoon ready prepared spaghetti sauce, pizza sauce or salsa over each serving.

Yield: 8 servings.
