Braised Oxtail

2 oxtails, cut at joints
4 Tbsp. shortening
1/2 tsp. salt
1/4 tsp. paprika
1/2 cup flour
3/4 cup canned tomatoes
3/4 cup water
8 onions, peeled
1/2 cup celery, diced
1/4 cup carrots, diced


Wipe oxtails with damp cloth. Melt shortening in kettle. Combine salt, paprika and flour. Roll pieces of
oxtail in flour. Brown each piece in melted shortening. Bring tomatoes and water to a boil; add vegetables. Pour over browned oxtails in a greased casserole. Cover and simmer slowly for 3 hours.

If a thicker gravy is desired, blend 2 tablespoons flour and 3 tablespoon cold water for each cup of
gravy. Return meat to casserole and serve hot
