Oxtail Hot Pot

1 oxtail (jointed)
seasoned flour
2 Tbsp. oil
3 onions, sliced
1/2 lb. carrots, chopped
3 potatoes, diced
salt and pepper to taste
beef stock


Toss the oxtail into seasoned flour and brown in hot oil. Put in a casserole dish. Saute onions in the oil (adding more if needed) until golden brown. Add the onion to meat with other vegetables. Season to taste with salt and pepper. Half over meat and vegetables with beef stock. Cover and cook in a 300 degrees oven for 4 hours. Serves 4.
