Oxtail Ragau
(Special From Alabama)
2 lb. oxtails (cut into sections)
3 Tbsp. fat
1 cup tomato juice
1 cup hot water
1 large onion, sliced
1 clove garlic
flour
1 bay leaf
4 whole allspice
1 Tbsp. vinegar or lemon juice
1 Tbsp. sugar
salt and pepper to taste
Roll oxtail pieces in flour which has been seasoned with salt and pepper. Brown on all sides in hot fat. Add the remaining ingredients. Cover and simmer gently until the meat is tender, about 3 to 4 hours. Serves 4.
