Autumn Roast Pork Dinner

1 (2 lb.) boneless rolled pork loin roast
3/4 tsp. salt
1/8 tsp. pepper
3 large dark orange sweet potatoes, peeled, and thinly sliced
1 medium onion, sliced and separated into rings
3/4 tsp. dried thyme leaves
1 quart apple juice


Sprinkle Pork Roast with 1/4 tsp. of salt and pepper place in 4 qt. crockpot. Place sweet potatoes around and on top of roast. Top with onion; sprinkle with thyme and remaining 1/2 tsp. salt. Pour over apple juice.

Cover and cook on low for 6 to 8 hours or until pork is fork tender.

With slotted spoon remove veggies and roast and place on serving platter. Drizzle some of cooking liquid over veggies and roast.
