Baby Back Ribs

The night before, apply a dry rub to the ribs, wrap in saran and refrigerate overnight.

Spice Rub:
1 T garlic
1 T onion powder
1 T salt
1 tsp. cayenne pepper (more if you like it hot)
1 T black pepper
1 T white pepper (I didn't have white pepper so I just added more black pepper. It still was great)
1 cup brown sugar
1/2 cup paprika


Mix all together, and rub a generous amount on the ribs. Depending upon the amount of ribs you have, there will be plenty left over spice rub to use another time, or just cut the recipe in half if you are only doing a few pounds of ribs.

The day you are to cook, take ribs out of the fridge about 1 hour prior to cooking. Preheat your oven to 250 degrees. Place a pan of hot water on the lowest rack. While oven is preheating, make a mopping sauce:


Mopping Sauce:
3/4 cup apple juice
1/4 cup oil


Put in jar, cover, and shake to mix

Put the ribs on a wire rack, bone side down, directly over the pan of water to catch drippings. After 1 1/2 hours of cooking (not before), spritz or mop the ribs with the apple juice/oil mixture. Do this every 1/2-3/4 hour until ribs are done.

To test for doneness, look at the bones and watch for the meat to pull back from the ends, or insert a tooth pick between the bones and if it goes through easily, they are done. It will take about 3-4 hours at 250 degrees.

About 20 minutes before the ribs are done, apply your favorite BBQ sauce.
